Ancho Chicken Tacos with Avocado Cilantro Slaw

These tacos were delicious made with chicken and yet the recipe is versatile enough that you can easily substitute tilapia or shrimp.  You can either leave the avocado crème separate from the slaw mixture or mix the avocado crème into the slaw mixture (which is what we did and made serving easy).

Ancho Chicken Tacos with Avocado Cilantro Slaw

Serves 4

  • 1 pound skinless, boneless chicken breasts, cut into ¼ inch strips
  • 1 ½ teaspoons ancho chile powder
  • 1 teaspoon garlic salt
  • ½ teaspoon ground cumin
  • Cooking Spray
  • ¼ teaspoon lime zest
  • 2 tablespoons fresh lime juice, DIVIDED
  • 1 teaspoon kosher salt, DIVIDED
  • ¼ cup 0% Plain Greek Yogurt
  • 2 tablespoons water
  • ½ ripe peeled avocado, diced
  • 1 ½ teaspoons chopped seeded jalapeno, DIVIDED
  • 2 cups packaged 3-color Cabbage Slaw (raw green cabbage, red cabbage, carrots – the kind without any dressing on it)
  • ½ cup thinly sliced scallions
  • ½ cup chopped fresh cilantro
  • 8 (6-inch) corn tortillas

Combine first 4 ingredients (chicken through cumin) in a large ziptop plastic bag; close bag and shake contents to fully coat the chicken with the spice mixture.

Heat a large non-stick skillet over medium-high heat.  Coat pan with cooking spray.  Add chicken to pan; cook 4 minutes, stirring frequently.  Remove chicken from pan to a medium size bowl.

Combine lime zest, 1 tablespoon juice, ¾ teaspoon salt, yogurt, water, avocado and ½ teaspoon jalapeno in a blender or mini-food processor; process until smooth.

Combine remaining 1 tablespoon juice, ¼ teaspoon salt, slaw, scallions, 1 teaspoon jalapeno, and cilantro in a large bowl, tossing to coat.  You can either leave the avocado crème separate from the slaw mixture or mix the avocado crème into the slaw mixture (which is what we did and made serving easy).

Heat tortillas according to package directions.  Divide the chicken evenly among the tortillas.  Add the avocado crème / slaw mixture evenly on top of the chicken.
