Mojo Beef Kabobs

While you have the grill fired up for the kabobs, grill some side vegetables for an oven-free meal!

Mojo Beef Kabobs

(modification of recipe originally from National Cattlemen’s Beef Association)

Serves 4

  • 1 pound boneless beef top sirloin steak, cut 1” thick and excess fat trimmed
  • 1 teaspoon coarse ground black pepper
  • 1 large lime, cut into 8 wedges
  • 1 medium red onion, cut into 8 wedges
  • 1 (10 ounce) container grape or cherry tomatoes
  • ¼ cup fresh orange juice
  • ¼ cup fresh lime juice
  • 3 tablespoons finely chopped fresh oregano (this is not the time for dried oregano)
  • 2 tablespoons finely chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 ½ teaspoon ground cumin
  • 1 teaspoon minced garlic
  • ¾ teaspoon kosher salt

Preheat grill to medium heat.

Cut beef steak into 1 ¼ “ pieces; season with pepper.

Alternately thread beef with lime and onion wedges evenly onto four 12” metal skewers. Thread tomatoes evenly onto four 12” metal skewers.

Whisk Mojo sauce ingredients (orange juice through salt) in a small bowl. Set aside.

Place beef kabobs on grill over medium heat covered for 8 – 11 minutes, turning once. Grill tomato kabobs covered for 2 – 4 minutes or until slightly softened, turning occasionally.

Serve kabobs drizzled with sauce.
