Sauteed Chard with Pancetta

(modification of recipe originally from Cooking Light)

Serves 4

  • 2 bunches Swiss chard (about 1 pound)
  • 1 ounce pancetta, diced (about ¼ cup)
  • 2 garlic cloves, minced
  • ¼ teaspoon crushed red pepper
  • 2 tablespoons grated fresh Parmesan cheese

Trim stalks from chard leaves (discard stalks).  Chop leaves to roughly 1-inch pieces.  Rinse leaves and spin dry in lettuce spinner (or with paper towels).

Heat a large Dutch oven over medium-high heat.  Add pancetta to pan; sauté 2 minutes or until lightly browned, stirring frequently.  Add garlic to pan; sauté 30 seconds, stirring frequently.  Add half of chard leaves to pan; sauté 1 minute or until leaves wilt, stirring frequently.  Add remaining chard leaves and pepper to pan; sauté 1 minute or until leaves wilt, stirring frequently.  Sprinkle with cheese.
