Sautéed Kale with Pine Nuts

Are you eating your greens?  You will if they taste this good!  Pictured with Pesto Stuffed Chicken.

Serves 4

  • 1 small bunch Kale, stems removed and chopped (approximately 4 packed cups)
  • 1 teaspoon extra virgin olive oil
  • ¼ cup diced onion
  • 1 garlic clove, minced
  • 2 tablespoons pine nuts
  • ¼ cup vegetable broth or water
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Heat the oil in a large non-stick skillet and sauté the onions on medium heat until translucent.  Add the garlic and pine nuts; stir for 2 minutes (being careful to not let the garlic and nuts sit and burn).  Transfer to a small bowl.  Add the kale and broth/water to the skillet.  Heat until wilted, about 5 to 8 minutes, stirring occasionally.  Season with salt and pepper.  Serve kale topped with the onion mixture.
