If you love the lime and cilantro flavor combination, this is your recipe.
(modification of original recipe from Elana’s Pantry)
Serves 4
- 1 pound skinless boneless chicken breasts or tenders
- ½ teaspoon fresh lime zest
- ½ cup fresh lime juice (about 4 to 5 limes)
- ½ cup fresh cilantro, chopped
- ¼ cup Dijon mustard
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon chili powder
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon crushed red pepper (optional)
Combine lime zest through crushed red pepper (if using) in a blender or food processor, pulsing the marinade until all ingredients are well combined.
Place chicken in an 8 inch by 8 inch (or similar size) baking dish that has been sprayed with non-stick spray. Pour the marinade over the chicken; cover and refrigerate for 30 minutes or up to 6 hours.
Bake at 350 degrees for 22 minutes uncovered, or until chicken internal temperature is 165 degrees. Serve with extra sauce spooned over top.
