Salmon is our typical Sunday night dinner so we’re always looking for good recipes to add to the weekly rotation. This is a nice spicy and sweet combination and easy to prepare.
(modification of recipe originally from Cooking Light)
Serves 4
- 4 (6-ounce) salmon fillets
- 1 teaspoon ground coriander
- ½ teaspoon kosher salt
- Cooking spray
- 2 tablespoons honey
- 1 tablespoon fresh lime juice
- 2 teaspoons low-sodium soy sauce
- 1 teaspoon Sriracha hot chili sauce (or Thai Chili Garlic Paste)
- 4 teaspoons thinly sliced green onions
Sprinkle salmon evenly with coriander and salt. Heat a large non-stick skillet over medium-high heat. Coat pan with cooking spray. Add fish; cook 5 to 7 minutes on each side or until salmon flakes easily when tested with a fork or until desired degree of doneness.
Combine honey, juice, soy sauce and Sriracha in a bowl; drizzle over salmon. Sprinkle with green onions.
