This is a re-make of a dish we had at the Grand Canyon North Rim Lodge this summer. This is a delicious vegetarian dish or add diced grilled chicken breast for a protein packed meal.
The apple cider vinegar ties the chicken and collards together. The Quinoa Pilaf balances the meal, and provides more protein!
