Vegetable Stir Fry

This recipe is another of our favorites from the Team Beachbody Ultimate Reset (body cleanse and detox).  It can easily become a full meal with the addition of cooked shrimp or diced cooked chicken breast.

Vegetable Stir Fry

(modification of original recipe from Team Beachbody Ultimate Reset)

Serves 4

  • 1 tablespoon coconut oil
  • 4 garlic cloves, diced
  • 1 tablespoon grated fresh ginger
  • 2 medium carrots, cut into diagonal slices ¼ inch thick
  • 2 cups broccoli florets, cut in half if floret is over 1 inch wide
  • 1 medium red bell pepper, strips sliced ½ inch wide and 1 inch long
  • 1 medium zucchini, cut in half lengthwise and sliced ¼ inch thick or smaller
  • 1 tablespoon sesame oil
  • 1 tablespoon Bragg Liquid Aminos (or reduced sodium soy sauce)

Heat coconut oil in large non-stick skillet or wok over high heat.  Add garlic, ginger and carrot; cook, stirring constantly for 1 minute.  Add broccoli; cook, stirring frequently, for 4 to 5 minutes.  Add bell pepper and zucchini.  Reduce heat to medium; cook 2 to 3 minutes or until tender crisp.  Turn off heat; add sesame oil and Bragg Liquid Aminos.  Mix well and serve warm.
