The test will be to see if you can only eat 1 serving of these tasty nuts! If cashews aren’t your thing, try the recipe with whole almonds or pecan halves (just add 1/2 teaspoon kosher salt to the mix before baking).
(modification of original recipe from Southern Living)
Serves 16
- 1 tablespoon unsalted butter
- 1 (9.75 ounce) container lightly salted whole cashews (about 2 cups)
- 2 teaspoons orange zest
- 2 teaspoons Jamaican jerk seasoning (we used McCormick brand)
- Wax paper
Preheat oven to 350 degrees. Heat butter in an 8 inch cake pan in the oven for 2 to 3 minutes or until melted; carefully stir in nuts, zest and seasoning.
Bake at 350 degrees for 10 to 15 minutes, stirring occasionally. Pour cashews onto wax paper and arrange in a single layer to cool completely, about 30 minutes.
Store in airtight container.
