Since first doing the Beachbody Ultimate Reset in 2014, this has become our staple “house” dressing. The Dijon lends creaminess, maple syrup adds a touch of sweetness and vinegar + lemon add a well-balanced sour/tartness.
(modification of original recipe from Beachbody Ultimate Reset)
Serves 14 (1 tablespoon/serving)
- ¼ cup extra virgin olive oil
- ¼ cup Bragg organic raw unfiltered apple cider vinegar (or other apple cider vinegar)
- 3 cloves garlic, crushed
- 1 teaspoon fresh lemon zest (1 lemon)
- 3 tablespoons fresh lemon juice (1 lemon)
- ½ teaspoon Himalayan salt or kosher salt
- 1 teaspoon Dijon mustard
- 1 tablespoon pure maple syrup
- 2 tablespoons chopped fresh parsley (optional)
Place all ingredients in a blender or mini-food processor; cover with lid. Blend until smooth. Refrigerate if not using immediately. It will solidify when cold; bring to room temperature for 30 minutes (or microwave on high for 30 seconds) and stir well before serving.
