Turkey Taco Casserole

Simply mix and bake.  It does not get much simpler than that!  Although the recipes makes 8 delicious servings, it can easily be cut in half and baked in an 8” x 8” baking dish.

Turkey Taco Casserole

(modification of original recipe from Hello Healthy)

Serves 8

  • 2 pounds 99% lean ground turkey breast
  • 1 ½ cups salsa (select the heat grade based on your preference; we used medium)
  • ½ large onion, diced
  • 2 garlic cloves, diced
  • 1 ½ tablespoons taco seasoning (you can also make your own – recipe at the bottom)
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 (15 ounce) can corn, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup shredded Mexican cheese blend

OPTIONAL TOPPINGS

  • 16 (6 inch) corn tortillas (2 tortillas/serving)
  • ½ cup 0% plain Greek yogurt (1 tablespoon/serving)
  • 1 avocado, sliced into 1/8 wedges (1/8 avocado/serving)
  • ¼ cup fresh cilantro, chopped (1/2 tablespoon/serving)

Preheat oven to 375 degrees.  Prepare 9” x 13” casserole dish with non-stick spray.

In a large bowl, mix together turkey and the next six ingredients (turkey through pepper).

Pour turkey mixture into the prepared casserole dish, then pour the corn and black beans on top.  Bake at 375 degrees for 45 minutes.  Remove casserole from oven and use a large spoon to remove any grease that has come to the top.  Sprinkle cheese on top of casserole; return to oven for 25 to 30 more minutes.  Remove any additional grease that has come to the top before serving.

HOMEMADE TACO SEASONING MIX (makes extra)

  • 2 teaspoons chili powder
  • 1 ½ teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon ground oregano
  • ¼ teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper

Mix all ingredients together.  Store in an airtight container.
